The Padovan Krystal Stop Model 40 (also referred to in some documentation as K-Stop 40) is a continuous cold tartrate stabilization system used in wineries to remove excess potassium bitartrate before bottling, preventing the formation of “wine diamonds” (tartrate crystals) in finished wine. It is manufactured by Padovan (TMCI Padovan).

 

HOW THE SYSTEM WORKS

The process combines:

  1. Rapid cooling of the wine to near its freezing point.
  2. Controlled crystallization of potassium bitartrate.
  3. Reaction/holding time in a crystallization chamber.
  4. Continuous separation of the formed crystals using hydrocyclones.
  5. Conductivity monitoring to verify tartrate stability and automatically recycle wine if the target stability is not reached.

This is essentially an accelerated version of traditional cold stabilization, which can require several days of refrigerated tank storage. The Krystal Stop process typically achieves stabilization in approximately 90–270 minutes, depending on wine characteristics and operating conditions.

  • Model 40 is one of the fully automated PLC-controlled versions (Models 40, 60, 100, 150, and 200).
  • Automatic control covers filling, stabilization, monitoring, and washing cycles.
  • Continuous conductivity measurement verifies stabilization.
  • Automatic recycle occurs if preset conductivity targets are not achieved.
  • Integrated hydrocyclones continuously remove precipitated crystals.
